I think this is a vegan recipe, unless there are hidden traps.
Quick lentil curry recipe - makes about 3 servings, as I recall
2 tsp crushed garlic
1 tsp chopped ginger
1 onion, sliced or finely chopped
1 green chilli, sliced (you can use dried chilli too - add it with the dry spices)
2 tins brown lentils, not drained
1 tin crushed tomatoes
1 tsp each:
cracked pepper
ground cumin
ground coriander
ground fenugreek
salt (or to taste)
1/2 tsp cumin seeds
bit of oil
Heat the oil in a frying pan and fry the cumin seeds until they splutter. Add the ginger, garlic and onion and fry for a couple of minutes, then add the sliced chilli and continue to cook until the onion is translucent.
Add the dry spices and cook for about 1 minute, constantly stirring, then add the lentils and tomatoes. Bring to a boil then simmer for long enough to let the flavours develop, adding water as needed - I would say at least ten minutes but you can probably get away with five if you're hungry.
